I am cooking up mostly lean protein and veg (with the odd carb) for all the reasons and took a bit of a random guess at a meal just now. It turned out to be delicious, so I share it here with you.

Ingredients

  • 1 tbsp olive oil
  • 2 carrots (diced)
  • 1/2 red onion (diced)
  • 2 courgettes / zucchinis (roughly chopped into 1.5cm cubes)
  • 500g tenderloin chicken (choped into 3cm pieces)
  • Juice of 1/2 a lemon
  • 4 tablespoons Greek yoghurt 
  • 2 tablespoons garlic powder 
  • Salt
  • Pepper

Method

Warm up a large frying pan with the olive oil, and put in the carrots to gently soften. Add the lemon juice.

Once nearly soft, add the chicken, onion, salt, pepper, stir and cover. Stir the chicken periodically and recover until nearly done.

At the same time, in a separate frying pan, with a little oil, quickly give the courgettes some colour on all sides.

Combine all the ingredients into the large pan and add the garlic powder and yoghurt.

Simmer gently, mixing occasionally, until cooked through.

Enjoy! Maybe with rice or some fresh bread.
